Vegetarian tacos: You’ll love this low fat recipe!

Vegetarian tacoI just came up with a great new recipe that I
think you might really enjoy. My sister was visiting us from out of town
and I wanted to have her over for dinner.

My kids requested tacos, and I usually use extra lean ground turkey, but
my sister is a vegetarian and so I wanted to come up with something she
might enjoy as well.

Well I sauteed a bunch of Gardenburgers (meatless “veggie burger”) with
taco seasoning and it was amazing, everyone loved it.

So, I thought I’d pass it on to you. You definitely don’t have to be a
vegetarian to enjoy this. If you try this recipe, let me know what you
think. Enjoy!

Veggie Tacos

Serves: 8

Ingredients:
4 veggie burger patties, crumbled
1 package taco seasoning
3/4 cup water
2 large tomatoes, diced
1 cup lowfat cheddar cheese, grated
2 cups shredded lettuce
1/2 a medium onion
8 taco shells or whole-wheat tortillas

Directions:
- Warm meatless veggie burger crumbles in a saute pan.
- Add water and taco seasoning and bring to a boil. Simmer and stir until
desired consistency is reached.
- Heat taco shells or tortillas
- Dice tomatoes and onions, grate cheese and shred lettuce
- Pour two ounces of protein crumbles into shell, and add desired toppings.
